For the GRIDX Food Festival, Gault&Millau Luxembourg’s Pâtissier of the Year 2025 Florian Chauvière will take over Atelier Délice to present a selection of his signature desserts available to enjoy on the spot or to take away.

Known for his inventive approach to pastry, Florian Chauvière pushes the boundaries of traditional desserts by combining unexpected ingredients, vegetables, and surprising flavour pairings. His philosophy is simple: desserts should be light, balanced, and never overly sweet, leaving guests curious to discover the next bite.

Having grown up in the kitchen, learning from his father, who ran the restaurant at Hotel Bissen, and baking cakes with his grandmother, Florian developed an early passion for pastry. After training in Spa, Belgium, where he specialised in baking, chocolate, and ice cream, he quickly built a reputation for his creative style.

His desserts often include unusual elements such as mushrooms, cauliflower, celery, wasabi, or oakwood, combined with classic pastry techniques to create refined and surprising compositions.

At the festival, visitors can expect a playful and creative dessert selection, showcasing Florian’s signature style: elegant, original, and full of unexpected flavour combinations.
