A botanical culinary experience by René Mathieu and Mario Willems, exploring the richness of plants, seasonal ingredients, and sensory gastronomy inspired by nature.

My Roots is a culinary and food consultancy company founded by Michelin-starred chef René Mathieu and entrepreneur Mario Willems, dedicated to exploring the extraordinary potential of botanical ingredients in gastronomy.

René Mathieu, Executive Chef of the restaurants Fields, who is internationally recognized for his plant-forward cuisine and was named Best Vegetable Chef in the World in 2021 and 2022. Together with Mario Willems — a passionate gastronome and long-time collaborator — they created My Roots in 2018 to share their vision of cuisine rooted in nature, seasonality, and wellbeing.

Their approach celebrates local sourcing, botanical ingredients, and refined contemporary cooking, creating dishes that balance flavour, nutrition, and aesthetics while highlighting the richness of the plant world.

At the GRIDX Food Festival, My Roots will present a menu inspired by local and seasonal ingredients, featuring three dishes:

Cucumber & Strawberry, Melba style

Crunchy seasonal green vegetables with fermented jus and mint oil

Caramelized fennel with fennel-lemon soubise, crispy rice noodles and aniseed jus

Guests will also have the opportunity to discover and purchase selected items from the My Roots boutique, including their comic book, edible perfumes, house liqueurs, and Sakura vinegar.
